100 Variations Wraps

I call these 100 variations...because, literally, you can build these with any combination of ingredients. This is a good chance to be creative. Caution..try them out on your family before appearing in public with these if you're using an unproven combination! They're great to make ahead. I came up with this recipe when I saw something similar on a menu...that was outrageously priced! There are so many variations...you can add or subtract ingredients depending on your tastes. This recipe lends itself to a "salad bar" style dinner...where everyone assembles their own. Its also great for picnics, field trips, or after school snacks...just keep the ingredients on hand. I've served these as hors d'oeuvres for graduations, ceilis, and church functions. Make the roll ups...let sit at least 2 hours in the fridge to get the ingredients to meld together, then cut into bite size pieces...this part can be done ahead also...place in a large tupperware with wax paper seperating the layers. Avacados should only be used if the roll ups will be eaten right away. Tomatoes will be o.k. for a few hours...but they get mealy if sitting too long. Everything else should be good for making ahead. Great for any kind of leftovers.

Here's the basic recipe...
Wrap Basics
Start with a flour tortilla (there are gourmet ones available now). Spread a dressing over 3/4 of the tortilla. Add some crunchy vegetables on top of the dressing. Add meat if desired. Roll the tortilla toward the dry side...(the part without dressing). Add a dab of dressing to the very edge to keep the wrap secure. Serve, or...to use later, lay the tortilla on a piece of plastic wrap. Roll the wrap tightly in the plastic, crimp and turn under the edges. Place in the fridge until needed.

beef...lunch meat, roast, fajita, carne asada...etc.
