This recipe comes from my pa, Gary. Its excellent for tough cuts of beef. Its almost a 1 dish meal. You make the rice seperately, but an alternative would be to use instant rice, and add it when you add the milk to the beef.
Beef Tips And Rice
1-2 lbs beef, cut into small chunks
flour
season salt (I like Johnny's brand)
1 Tbsp butter or oil
1 pint beef broth
1 cup milk
1 cup rice
2 cups water
Sprinkle the beef with seasoned salt and dredge in flour. Heat butter in a heavy skillet, and brown beef. After browning meat, add a little more flour to make a paste, and cook 2 minutes. Add beef broth and simmer, covered, 45 minutes. Add 1 cup milk and simmer, uncovered, 30 minutes more. Start the rice when you add the milk to the beef. For rice...in a seperate saucepan, add rice and water. Bring to a boil, then cover and turn down to a simmer for 20 minutes. Serve beef tips over rice.
