German Pancakes

My family loves these. They're served at a great restaurant in Sequim, WA called the Oak Table that we've visited with Rob's grandpa, Jim. I like them for dinner, served with bacon or sausage on the side.

German Pancakes
6 large eggs
1 cup flour
1 cup milk
1/4 cup butter, melted
1 tsp salt
1/2 cup powdered sugar
8 lemon wedges, or 4 to 5 Tbsp lemon juice

Beat eggs in mixer on high for 5 minutes. Alternately add the flour and milk. Add the salt, and melted butter. Continue to mix the ingredients for another minute or two. Spray 4 pie pans with nonstick pan spray. Ladle 1/2 cup of batter into each pie pan. Bake in a 425 degree oven for 10-15 minutes, until brown. Sprinkle with powdered sugar and drizzle with a little lemon juice. Makes 8 pancakes

Keto German Pancakes (In Testing at 1/6 size batch)
1 large egg
2 tsp coconut flour
6 tsp almond flour
1/8 tsp xanthan gum
1/8 tsp baking powder
2 tsp butter, melted
pinch salt
sprinkle of sugar substitute...like Swerve Confectioner, erythritol, monkfruit, etc.
drizzle of lemon or lime juice

Follow directions above. (Will also be testing batter in a waffle maker)

1 cup almond flour = 1/4 cup coconut flour

Xanthan gum and baking powder are added to substitute for the lost gluten. 1 tsp per cup (each)
