Potato Pucks

I came up with this recipe when I had a ton of leftover mashed potatoes and wanted something different. They're crisp on the outside and creamy on the inside.

Potato Pucks
4 cups leftover mashed potatoes
2 eggs
1/2 to 1 cup grated cheddar cheese
1/4 cup parmesan cheese
1/3 cup sour cream
1 tsp garlic powder
Mix all ingredients together well. Drop by large spoonfuls onto a greased cookie sheet. Bake at 350 degrees for 30-45 minutes, or until golden brown on top. Serve hot.

  1. And these sound even more delicious! I'm definitely going to make these once our move is over! Do you think you'd need to add anything as a substitute if you left out the sour cream?

  2. Katie, if you don't like sour cream, you could substitute about half as much heavy cream or milk. The cream will be richer than the sour cream and the milk will be less so.
