I got this recipe from a bag of barley flour. They are sweet and yummy! The texture is slightly more crumbly than regular waffles, but the kids will love them!
Sweet Barley Waffles
3/4 c barley flour
3/4 c flour
1 egg
1 T applesauce, OR oil
1 c milk
2 T honey
1 T baking powder
2 t vanilla
Mix and cook in waffle iron. These will keep in a ziptop bag in the refrigerator for 3-4 days. Reheat be placing back in a heated waffle iron, or toaster.
Freeze:
Cook waffles just until they are barely done and hold together. Remove from the waffle iron and cool. Place on a cookie sheet in the freezer until frozen solid. Move to a ziptop freezer bag. Label and date. Don't freeze these for more than month. To thaw: Remove from the freezer and thaw in a covered container on the counter. After thawing, put back in a heated waffle iron to heat and brown, or place in a toaster.
