1 Pan Chow Mein

I like to make this on a chilly family movie night, but its also tasty in the summer. Its another nice comfort food, and great the next day! This is a one dish meal that can be made the previous day.

Chow Mein
1-2 lbs chicken OR pork, cut into bite size pieces
2 stalks celery, chopped
1 large carrot, peeled and chopped
1 small onion, chopped
1 small jar pimentos
2 cans cream of mushroom soup
1/2 soup can of milk
2 cups water
1 chicken bouillon cube
1 cup cooked rice OR equivalent amount instant rice
season salt (I like Johnny's brand)
garlic powder (NOT garlic salt)
chow mein noodles (found in the Asian foods section of the store)
soy sauce
1 Tbsp butter

Sprinkle chicken with season salt and garlic powder. Brown in butter. Add celery, onion, and carrot to chicken. Cook about 5 minutes, or until vegetables are tender. Add entire jar of pimentos, including liquid; mushroom soup, milk, water, bouillon cube. Cook about 5 minutes, stirring occasionally, until bouillon cube is dissolved. Add rice. Mix together and warm through. Serve with chow mein noodles on top and sprinkle with soy sauce.
