This recipe comes from my friend, Lisa. Use leftover rice and ham. If I don't have leftovers, I'll boil a ham hock and use the ham from it...and make the cook a batch of rice...Gary only likes it plain anyway. Once again...approximate measurements.
Fried Rice
2 cups cooked rice
1/2 to 1 cup cooked ham, diced
1 green onion, chopped fine
1 egg, beaten
2-4 Tbsp olive oil
soy sauce
Drizzle 2 Tbsp olive oil in a pan and add the onion, rice, and ham. Cook for a minute or two. Add more oil if it looks dry, or sticks too much. Add 2-4 dashes of soy sauce and the egg and stir vigorously until the egg is cooked. Serve hot.
