Pimento Cheese Sandwiches

I have fond memories of these at my Grandma Nelson's. This one travels well too. I make them for picnics...and on long trips, keep the mixture in the cooler and assemble the sandwiches during a pit stop. Its another of those approximate measurement recipes.

Pimento Cheese Sandwiches
2 cups cheddar cheese, grated
1 small jar pimentos
mayonnaise
bread

Mix the cheese & pimentos, including juice, together. Stir in enough mayonnaise to moisten the mixture. Spread on bread. YUM!  

You can also toast the bread first, then spread the mixture over the top while it's warm and eat as an open faced sandwich. My friend introduced me to the toasting method and it might be my new favorite way to enjoy this recipe!
