Use lean ground beef for this one, and drain off any fat that collects in the pan before serving. Use the leftovers for meatloaf sandwiches. This is good to assemble the day before in the loaf pan and cook when needed, or cook ahead and reheat. This recipe freezes well, but I prefer to have freshly cooked meatloaf.
Meatloaf
1 lb hamburger
1 handful rolled oats
1 large egg
1 small onion, finely chopped
bread crumbs
ketchup
Mix together the hamburger, oats, egg, and onion. Add enough bread crumbs to round out the mixture and add enough ketchup to make it gooey. About the consistency of a brownie mix. Pat into a greased loaf pan. Bake at 350 degrees for about 45 minutes, or until cooked through. Move meatloaf to a serving place and slice. Serve hot.
FREEZE:
Assemble ingredients. Place foil into a loaf pan and spray with pan spray. Pat meat mixture into pan. Place pan in the freezer for 1 hour. Remove frozen meatloaf and foil from the pan. Wrap more foil around meatloaf and place in a zip top baggie. Label and date. To thaw...remove meatloaf from freezer and thaw overnight in the refrigerator. Unwrap, leaving original foil intact. Place in a loaf pan and bake as directed.
