No Bake Cheesecake

This recipe comes from my friend, Julie. When she discovered this one...we spent at least 2 Sunday's a month one summer at her house chowing down on fresh garden veggies and cheesecake. I have fond memories of this recipe! Its great for a summer dessert...rich and creamy and SUPER EASY!

No Bake Cheesecake
1 package of cream cheese
1 small can of condensed milk
1/4 cup lemon juice
1 tsp vanilla
Leave the cream cheese in the package on the counter for a couple of hours, or overnight. Put all ingredients into a large mixing bowl and beat well. Pour into a graham cracker crust and chill for 1 or more hours. Top with blueberry or cherry pie filling.
