Buttermilk Pancakes

Buttermilk Pancakes:

2 cups flour
1 1/4 tsp baking soda
3/4 tsp baking powder
1 tsp salt
2 large eggs
2 cups buttermilk
1/4 cup melted butter OR unsweetened applesauce
Combine dry ingredients in a mixing bowl. Add wet ingredients and stir just until incorporated. Cook on a hot griddle.

FREEZE:
Cook pancakes just until set and remove to a rack to cool. Place in a ziptop baggie with waxed paper between each one. To thaw: Remove desired number of pancakes from the baggie and let thaw on the counter for 10 minutes. Heat in the toaster until golden brown.
