Gyro Wraps

This is my version of a Greek Gyro. I love those things...but they're expensive. Serve with Kalamata olives on the side. This could easily be vegetarian by omitting the beef. These are great for picnics or meals on the run.

Gyro Wraps:
Athenos brand Greek with Feta Cheese salad dressing
sour cream
flour tortillas, any size
cucumbers, sliced thin, longways
roast beef...thin sliced from the deli
onion, sliced thin
lettuce, shredded
feta cheese, crumbled (use sparingly)
For the dressing...mix 1 part salad dressing to 1 part sour cream. Spread dressing over 3/4 of the tortilla. Layer the cucumbers, beef, onion, and lettuce over the dressing. Sprinkle with feta cheese. Roll the tortilla toward the dry side...(the part without dressing). Add a dab of dressing to the very edge to keep the wrap secure. Serve, or...to use later, lay the tortilla on a piece of plastic wrap. Roll the wrap tightly in the plastic, crimp and turn under the edges. Place in the fridge until needed.
