Potato salad is so easy. I don't know why people buy it in the store.
Potato Salad:
6 medium russet potatoes
1 egg
1 tsp salt
1/4 onion
2 stalks celery
1/2 cup italian salad dressing
1 tsp mustard
1/2 to 1 cup mayonnaise
Peel and wash the potatoes. Cut into large, bite sized cubes. Place in a pan of cold water. Wash the egg and place in the pan along with the salt. Cover and boil for 15 minutes, or until the potatoes are tender, but not mushy. While the potatoes are boiling, chop the onion and celery. Place in a large bowl. Drain the potatoes and remove the egg. Mix the potatoes with the vegetables and add the salad dressing. Toss well. Cool and peel the egg. Chop finely and add to the potatoes. Cool potatoes completely. Add the mustard and enough mayonaisse to moisten well. Store, covered in the fridge. The flavors develop overnight.
