Sun Dried Tomato, Chicken, & Pasta


I made this dish up one night...it is delicious. 

4 oil packed, sun dried tomatoes
1/2 cup water
2 chicken breasts
2 Tbsp butter
seasoned salt
1 roma tomato, chopped
1 rib celery, chopped
1/2 onion, diced
1 oil packed, red bell pepper, chopped
2 cloves garlic, minced
1/2 tsp Italian seasoning
1 Tbsp white wine
1 large handful angel hair pasta
1/4 cup gouda cheese, grated
1/2 cup parmesan cheese, grated
Bring 1/2 cup water to a boil. Pour over sun dried tomatoes. Cover and let sit 10 minutes. Reserve soaking water. Mince sun dried tomato. Cut chicken into bite sized pieces. Sprinkle with seasoned salt. Saute chicken in butter until almost cooked through. Remove from pan. Add sun dried tomato, roma tomato, celery, onion, bell pepper, garlic, and anchovy paste to the hot pan. Saute until opaque. Add chicken back into the pan with vegetables. Add Italian seasoning, white wine, and reserved sun dried tomato water. Bring to a boil then turn down to medium for 5 minutes. Cook pasta in a salted water in a separate pan. Drain. Add pasta to chicken mixture. Top with cheeses. Toss well. Serve hot.
