Pistachio Chocolate Chip Cookies
I got this one from my Mom. I recommend using the Jello brand pudding mix. The generic mix didn't have as much flavor. You can buy pistachios already shelled in the produce section of the grocery store. You could also eliminate the chocolate chips for a yummy nut cookie.
Pistachio Chocolate Chip Cookies
1 cup sugar
1 cup dark brown sugar
2/3 cup butter
2/3 cup shortening
2 eggs
2 tsp vanilla
1/2 cup water
3 cups flour
1 tsp baking soda
1 tsp salt
2 packages instant pistachio pudding mix
1 cup chopped, roasted, unsalted, pistachios
1 pkg milk chocolate chips
1/2 cup semi sweet chocolate chips
Shell the pistachios, and dry roast in a cast iron skillet about 5 minutes...watch carefully. Let cool. Preheat oven to 375 degrees. Cream sugar, brown sugar, butter, and shortening together. Add eggs and beat well. Add vanilla, water, and pudding mix. Stir well. Sift together flour, baking soda, and salt. Add 1/2 the dry mixture to the wet mixture. Mix well. Add the rest of the dry mixture. Mix well. Chop pistachios. Add pistachios, and chocolate chips. Stir. Drop by teaspoonsful on a cookie sheet. Bake 8-10 minutes, or until just browned. Cool 2 minutes and remove to a cooling rack.
