Yummy sweet tart goodness!
1/2 c shortening
1 1/2 c sugar
1 egg
1 c buttermilk
1 tsp vanilla
1 tsp baking soda
dash salt
2 c flour
2 c diced rhubarb stems
Mix well. Batter will be thick. Pour into a greased 9x13" cake pan.
Topping:
1/2 c sugar
1 tsp cinnamon
Mix and sprinkle over unbaked batter.
Bake at 350° for 30-40 minutes. Cool & serve.
