This recipe uses leftover roast beef, which makes it super quick to put together! This dish pairs well with macaroni salad, potato salad, green salad, or dill pickles.
BBQ Beef Sandwiches
1 to 2 cups cooked roast beef
2 to 4 hamburger buns, or hoagie buns, or bread slices
1 bottle your favorite BBQ sauce. I like Sweet Baby Ray's original or sweet n spicy
1/2 small sweet onion, sliced
2 Tbsp butter

Super quick version:
Shred the roast beef with a fork. Pour BBQ sauce over to coat the meat. Heat in the microwave a minute or two, stirring once. Serve on bread of your choice.
Fancier version:
Spread butter on the inside of each bun half. Place butter side down in a skillet on medium heat and cook until toasted to your liking. Remove the buns to a plate with the toasted sides up. Add 1 Tbsp butter to the hot skillet. Add the sliced onions and cook on medium until the onions are light brown. While the onions are cooking, shred the roast beef with a fork. Pour BBQ sauce over just to coat the meat. Heat in the microwave a minute or two, stirring once. Spread the BBQ meat mixture one half of the bun. Top with cooked onions. Serve hot.
