This recipe is modified from All Day I Dream About Food's recipe.
I use 2% milk so the macros will be quite a bit different than the original.
2 large eggs1 large egg yolk
⅓ cup Lakanto monkfruit classic blend OR allulose
1/8 teaspoon salt
2 cups 2% milk
1 teaspoon vanilla extract
3 to 4 gratings of fresh nutmeg (to taste, it takes very little!)
dash ground cinnamon
Whisk the eggs, yolks, sweetener, and salt together in a large saucepan. Slowly whisk in the milk until well combined.

Using an instant read thermometer, cook the mixture over low heat, whisking constantly, until it becomes thick enough to coat the back of a spoon and registers 165F (this can take up to 15 minutes).
Remove from the heat and stir in the vanilla, nutmeg, and cinnamon. Cover tightly with plastic wrap and chill for at least three hours.
