Fantastic Foccacia...
This recipe comes from the Pampered Chef. This one is my personal favorite. It's elegant enough for appetizers when cut into small squares, yummy enough for a family dinner, & kid pleaser too!
Pizza dough...enough for 1 (12")crust...see pizza dough recipe
2 garlic cloves, minced
2/3 cup(2 oz) fresh romano or parmesan, grated
2 cups(8 oz) Mozzerella, shredded & divided
2 tsp oregano (or italian seasoning mix)
2 firm plum tomatoes, sliced
Preheat oven to 400 degrees. Pat dough onto baking sheet & prick with a fork. Bake for 10 minutes if thin crust, or 15 minutes for thicker crust. Remove from oven. Spread garlic over dough evenly. Sprinkle half of cheese over the dough. Add tomatoes in a single layer. Sprinkle on remaining cheese. Sprinkle oregano on top. Bake 15-20 minutes, or until golden brown and bubbly. Serve hot.
