This recipe comes from Rob's mom, Jeannine. Its super easy and no bake!
Pineapple Pie
1/3 cup lemon juice
1 can sweetened condensed milk
1 can crushed pineapple, drained
graham cracker crust (premade, or recipe follows)
Mix lemon juice with canned milk. The mixture will turn watery and then thicken. Add pineapple after mixture thickens. Pour into a graham cracker crust. Set in the refrigerator for at least 12 hours to set up.
Graham Cracker Crust
1 1/2 cups (about 20) graham cracker squares, crushed
1/3 cup butter, melted
3 Tbsp sugar
In a small bowl, combine crumbled graham crackers, melted butter, and sugar. Press into the bottom and sides of pie pan. Bake at 350 degrees for 10 minutes. Fill and proceed with recipe.
