Yet another use for leftover Thanksgiving or Christmas turkey. This is a recipe my mom made up...super simple and delish. Of course, there aren't any measurements...just throw it together and enjoy! This would work well for leftover chicken too.
Jo's Turkey Tacos
leftover turkey
corn tortillas
smooth hot sauce
turkey baster
toothpicks or a clean wooden clothespin
oil (for frying)
Shred turkey (a food processor is great for this). Place 1 large spoonful down the center of a corn tortilla(taco style). Fold tortilla over and secure the upper portion together with the clothespin, or skewer with a toothpick. Fry in hot oil until semi-crisp. Drain on paper towels. Use the turkey baster to squirt hot sauce into the taco. Remove clothespin or toothpick before serving.
