Breaded Zucchini

I love breaded zucchini! I used to order it at a little hot dog stand near the Target I worked at. Since then, I've learned to make it at home. A great use of all that zucchini plaguing you in the fall!

Breaded Zucchini
zucchini, washed, and cut into strips-(if large) or rounds-(if small)
1 cup flour plus 1/4 cup
1 tsp baking powder
1/2 tsp salt
1 egg
1 cup milk
oil
Prepare zucchini and blanch in boiling water for 2 minutes, then remove to a bowl of ice water. Dry thoroughly. Heat oil in a heavy skillet to 350 degrees. Mix 1 cup flour, baking powder, salt, egg, and milk together. Dip zucchini into 1/4 cup flour. Set aside for 5 minutes to rest. Dip zucchini in batter mixture. Immediately, fry until golden brown. Drain on paper towels. To keep warm, place on a cookie sheet in a 250 degree oven until ready to serve. Serve hot with blue cheese or ranch dressing dip.
