Hush Puppies

I like hush puppies with a fruit vinegar rather than a malt vinegar. My favorite is huckleberry vinegar, which is hard to find. I recommend a raspberry, or blueberry vinegar instead. Don't just make these to go with fish. Try them for a party, snack, or side to any kind of dish.

Hush Puppies

2 1/4 cups yellow cornmeal
1 tsp salt
2 Tbsp onion, grated
3/4 tsp baking soda
1 1/2 cups buttermilk OR sour milk
oil
Heat oil (1") to 350 degrees. Mix cornmeal, salt, onion, and baking soda. Stir in buttermilk. Drop by spoonfuls into hot oil. Fry until brown, about 2 minutes. Keep warm in the oven on a cookie sheet at 250 degrees. Serve hot. Makes about 2 dozen.
