Pumpkin Spice Cake

Pumpkin Spice Cake

3 eggs
1 cup sugar
1/2 cup fat free sour cream
1 cup canned pumpkin (not pumpkin pie filling)
1 tsp vanilla
2 cups flour
1 1 /4 tsp baking soda
1 tsp salt
2 tsp cinnamon
1 tsp nutmeg
1 cup nuts, chopped (optional)
Preheat oven to 350 degrees. Grease and flour 9x13" pan. Cream together the sugar and eggs. Mix in sour cream, pumpkin, and vanilla. Mix in the flour, baking soda, salt, cinnamon, and nutmeg. Beat 2 minutes. Fold in the nuts, and pour into the cake pan. Bake 45-50 minutes, or until a toothpick comes out clean. Cool. Frost, if desired.
