My mom always made this simple salad. I remember it on many a summer day. Don't be afraid to substitute different pasta shapes for this one...just a little change up on an old fave.
Macaroni Salad:
4 cups elbow macaroni
water
1/4 cup onion, chopped
1/2 cucumber, chopped
2/3 cup mayonaiise
1/2 tsp sugar
1/4 tsp salt
1/3 cup milk
Cook the macaroni according to the package directions. Meanwhile, in a large bowl, mix together the mayo, sugar, salt, pepper, and milk until smooth. Add the onion and cucumber. Strain pasta and rinse with cold water. Shake off excess water and let cool a few minutes. Mix all together, cover, and put in the fridge overnight to let the flavors blend. Serve cold.
