My mom taught me this one. I tried several variations of this one with long cook rice and never had any success. Stick to the minute rice.
Spanish Rice:
2 tsp butter or bacon grease
1 cup minute rice
1/4 cup onion, diced
1/4 cup bell pepper, diced
1 small can tomato sauce
pinch salt
water
Saute butter, rice, onion, and bell pepper until veges are opaque. Add tomato sauce and enough water to make 1 cup of liquid. Cook about 5 minutes, or until rice is tender. Serve hot.
