Noodles Express

This idea came from my friend, Lisa. Its super easy and economical. This recipe is good for using leftover chicken...even leftover rotisserie chicken. Of course, you could use fresh or frozen chicken too. I like Yoshida's....find it in the oriental foods aisle at the grocery store. Its on the sweet side...but not as sweet as sweet and sour. This is easily a vegetarian dish with the ommission of the chicken.

Noodles Express:
2 chicken breasts, cooked and diced.
oil
1 red bell pepper, diced
1 green bell pepper, diced
1 carrot, diced
1 head broccoli, cut into bite size pieces
1-2 cups Mr. Yoshida's cooking sauce
1-2 cups angel hair pasta
Cook the pasta in a saucepan. In a large skillet, stir fry the chicken in oil...uncooked chicken will take a few minutes...cooked chicken will only need a minute. Add the vegetables. Cook until veges are tender. Add 1 cup of Yoshida's. Stir in the drained pasta. Add more Yoshida's if desired. Serve hot.
