This one is good for leftovers, or when you have a Thanksgiving urge. After we butchered our turkeys, I cut the breast meat off the bone and froze each 1/2 separately. I froze the legs on the bone, and cut off the rest of the dark meat. So, ultimately, I had 4 turkey dinners from each bird. 2 with white meat, and 2 with dark meat. You can buy fresh(not frozen) turkeys around Thanksgiving and do the same thing. Stuffing is easy to make, and I buy extra cranberries in the can, or fresh cranberries for the freezer when they're on sale around the holidays...
Wish It Was Thanksgiving Wrap:
flour tortillas
cranberry sauce
cream cheese
turkey...leftover, or lunch meat
stuffing
lettuce
For the dressing, mix 2/3 cup cranberries with 1/3 cup cream cheese. Spread cream cheese over 3/4 of the tortilla. Layer the turkey, stuffing, and lettuce over the cream cheese. Roll the tortilla toward the dry side...(the part without cream cheese). Add a dab of cream cheese to the very edge to keep the wrap secure. Serve, or...to use later, lay the tortilla on a piece of plastic wrap. Roll the wrap tightly in the plastic, crimp and turn under the edges. Place in the fridge until needed.
