Chocolate Banana Pops
I have fond memories of eating these chocolate covered frozen bananas at the zoo when I was a kid. I love these things! I don't tend to eat a whole one though. I cut the bananas in half and get a two-fer-one deal. You could even cut the bananas into 4 sections for small kids. This is a good one to make while you're baking the chocolate cookies for ice cream sandwiches. Then, you'll have a stocked freezer for the summer, at a fraction of the cost, with one afternoon's effort!
Chocolate Banana Pops6 ripe bananas
1 cup semisweet chocolate chips
candy sprinkles (optional)
nuts, chopped (optional)
Peel bananas, cut in half crosswise. Insert a wooden stick into flat end of each banana half. Lay bananas on a shallow pan; freeze for about 3 hours. If using sprinkles or nuts, spread them evenly on a large dinner plate. Set next to the chocolate station. Melt chocolate chips in a double boiler, or microwave. Dip the tops of each banana in the chocolate and quickly spread the rest of the banana with a spatula, coating well. Working very quickly, roll the chocolate covered banana in the sprinkles or nuts. Lay on a wax paper covered cookie sheet and freeze for 10 minutes. Wrap each banana in foil and place in a gallon size freezer bag. Label and date. Wrap each banana in foil; store in freezer.
