Quick Hamburger Casserole


This casserole is something I just threw together. See my post here to learn the mechanics of a casserole. Once armed with that information, you can create hearty crowd pleasing dishes in a snap....and on a budget!

1/2 to 1 lb lean hamburger or ground turkey
1 medium onion, chopped
1 to 2 cups frozen mixed vegetables
3 handfuls frozen french fries or tater tots (about 2 cups)
1 can cream of mushroom soup
1/2 cup milk (add more milk if needed)
1/2 cup cheese, shredded
Cook the hamburger and onion in a saute pan until cooked through. Add frozen vegetables and cook 3 minutes more. Using pan spray, spray a 9x13" cake pan. Place the meat & veg mixture, french fries, soup, milk, and cheese to the cake pan and mix well. Cook at 350 degrees 30 to 40 minutes, or until hot and bubbly throughout. Let sit 5 minutes before serving.
