Mexican Wedding Cakes


I had these at my wedding(since I'm part Mexican). My friend, Brenda, is Norwegian. She calls these sandies, and makes them in a crescent shape. We had a good laugh at the fact that these are traditional for both our families. Its a small world after all. They're easy and yummy with hot chocolate too.

Mexican Wedding Cakes
1 cup butter, softened
1/2 cup powdered sugar
1 tsp vanilla
2 1/4 cups flour
1/4 tsp salt
3/4 cup pecans or walnuts, chopped fine
powdered sugar
Heat oven to 400 degrees. Mix butter, 1/2 cup powdered sugar, and vanilla. Work in the flour, salt, and nuts until dough holds together. Shape dough into 1" balls. Place balls on ungreased cookie sheet. Bake until set but not brown, 10-12 minutes. While warm, roll in powdered sugar. Cool. Roll in powdered sugar again.
