Quesadillas


These are super easy. I make them for my Heather and her friends for a quick meal. This is another one of those no measurement recipes. The beauty of these, is that every one is made to order...so they can all be different.

Quesadillas
vegetable oil, OR lard for frying
flour tortillas
cheese, grated (I use cheddar, mozzerella, montery jack, etc.)
salsa
taco meat(optional)
refried beans(optional)
cooked chicken(optional)
bell peppers(optional)
onions(optional)
cilantro(optional)
fresh tomato(optional)
green chilies(optional)
Heat 1/4 inch of oil in a cast iron skillet to 350 degrees. Sprinkle cheese over 1/2 of a flour tortilla. Add salsa and any optional ingredients that you like. Fold the tortilla over, and fry until golden brown. Flip over, and cook. Drain on paper towels.
