Cooking Ahead


Well, 2 hours in the kitchen this week has produced several quick meals for the dinner table. I bought marked down meat...a 2 lb roast, 1 lb hamburger, 1 lb stew meat, 2 large skirt steaks, and 5 cube steaks. In total it cost $13.50. I sliced the skirt steaks into large, thin pieces and put them in a baggie with marinade to make carne asada for the grill later this week. Then, I filled the oven with potatoes to bake. The roast went in one crock pot and stew meat in the other. I cut the stew meat into smaller bite size pieces, seasoned all the meat and added beef broth to both pots. I cooked up a pound of burger for sloppy joes, and fried up the cube steaks. While all that was cooking, I made a large salad, cut up the veges for stir fry, and steamed 2 artichokes for later this week. The artichokes and salad just come along side the meat dishes. So, here's the run down of our meals...
1. Sloppy joes...using burger
2. Stir fry...using 2 cube steaks, broccoli, baby corn, etc.
3. Beef stew...using stew meat and baked potatoes
4. French dip sandwiches...using roast
5. Carne asada...using skirt steaks
6. Quick skillet dinner...using 3 cube steaks and baked potatoes
